The eczema-friendly, gut-loving, skin-boosting, and nervous system-regulating chimichurri that pairs beautifully with nearly every savory dish. brb. I’m drooling.


GF, VEGAN, PALEO, GUT HEALTHY, DAIRY FREE

(OPTION TO MAKE IT LOW-HISTAMINE BELOW.)

Ingredients

  • 1 cup packed fresh herbs (parsley &/or cilantro)

  • 3 organic *garlic cloves, peeled & minced

  • ½ cup mild extra virgin olive oil

  • 3 tbsp organic *apple cider vinegar

  • 2 tbsp *dried organic oregano leaves

  • 1/4 tsp sea salt

  • Cracked black pepper, to taste

  • 1 tsp spirulina (quality is key – see link for the one we use)

  • Option: Sprinkle finely ground pumpkin seeds on top when serving for an extra magnesium boost (see below for why it’s great for baby’s nervous system)

Method

  1. Remove stems from herbs. Mince herbs and garlic. Combine all ingredients in a bowl and mix until desired consistency is reached. (Mince ingredients extra well if offering to a baby.)

  2. For maximum freshness and flavor, store airtight in glass in the fridge for up to 5 days. Leftovers can be frozen in an ice cube tray (to reduce histamine build-up) for up to 3 months.

This sauce is incredibly versatile – pairs well with steak, poultry, organ meat, fish, egg, pizza... and more!

This green sauce is not just a health booster; it’s a flavor explosion. Packed with fresh herbs and vibrant flavors, it helps babies and kids develop adventurous palates. Plus, it's leveled up with spirulina – a superfood that’s a total game-changer.

The Superfood Secret: Spirulina

I love recommending spirulina to my Baby Nutrition & eczema clients because of its amazing health benefits:

  • Iron: Spirulina is a powerful source of plant-based iron, which is especially important for growing babies (a 6-month-old has greater iron needs than a full-grown male!).

  • Prebiotic: It supports healthy gut bacteria, which is great for those on an eczema elimination journey (#MicrobiomeBalance). Check out my previous IG post for why we strive to build a balanced & healthy microbiome daily. 

  • Zinc: Known as the "skin mineral," zinc is crucial for healthy skin, especially if you're dealing with skin concerns like eczema. Additionally, it is not uncommon for those struggling with eczema to have a zinc deficiency.

  • Calcium: Spirulina is naturally high in calcium, which coupled with sufficient zinc & magnesium, supports nervous system regulation (a big help with those toddlers who struggle with tantrums).

Final Tips for Extra Nutritional Benefits

  • For an extra boost of magnesium to support your baby’s nervous system, sprinkle finely ground pumpkin seeds on top of the sauce when serving.

  • Feel free to experiment and add different herbs (i.e. dill, mint, or basil) for a unique flavor twist.

*Modifications to make your chimichurri more low-histamine

  1. Use lemon juice instead of apple cider vinegar to reduce histamine levels.

  2. Swap garlic with a small amount of chives, which will likely be better tolerated.

  3. Skip dried oregano or use fresh oregano / basil, which is often better tolerated.

  4. Freeze in small batches when the sauce is fresh (i.e. portion it out into an ice cube tray)! Bring it out to thaw when you’re ready to serve it.

As always, for allergy / eczema families, if any of the above ingredients are new foods to you or yours, I recommend trying out small amounts first to observe for any reactions.
